Beef Pepper Paradise and Couscous
I created this one with a friend, she had some ingredients & she knew I liked to make stuff up so she gave me the go ahead
Ingredients
3 large bell peppers, one red, one yellow and one green (cut these in strips)
1/2 of a large onion (sliced)
about 2lbs of beef fajita strips
a hand full of turnip greens chopped
3 tablespoons sesame seed oil
olive oil to sautee (or any type of healthy oil you usually cook with)
cayenne pepper (if you like spicy food)
salt & tony chachere's creole seasoning
1.Place in olive oil to cover the bottom of the saucepan , not a thick layer.
2. Add in onions, let it fry for about 30 secs then add in fajita beef strips.
3. Add about 2 tablespoons of sesame seed oil.
4. Season with salt and tony chachere's creole seasoning
5. Cover for a about 2 minutes and stir again. You should see a beef broth forming in the saucepan. 6.Add the bell peppers, and turnip greens , lastly add cayenne pepper (1/2 a tsp).
7.Let the mixture cook for 5-10 minutes, on moderate heat.
Couscous:
This generally comes in a box with cooking instructions. I just added some black pepper and salt to it,then poured the sauce over it and voila...you have a delicious meal:)
